Cinnamon and Rum Pears

Cinnamon and Rum Pears

冰糖炖雪梨

 

Ingredients 配料

1 pc      Snow pear          1只        雪梨

1 pc      Lemon zest          1只        柠檬皮丝

2 g        Cinnamon stick   2克        桂皮条

1 pc      Vanilla stem        1根        香草茎

10 ml    White rum          10毫升  白朗姆酒

20 g      Rock sugar         20克      冰糖

1 pc      Mango                 1只        小芒果

30 g      Cranberry           30克      小红莓

5 g        Dark chocolate    5克        黑巧克力

 

Method

1.      Peel the pear and remove the stone.

2.      Prepare the sweet stock with lemon zest, cinnamon stick, vanilla stem, white rum and rock sugar.

3.      Braise the pears with the sweet stock for 1 hour or until just soft.

4.      Use mango slices, a cranberry, a dark chocolate curl and mint leaves.

烹调步骤

1.      将雪梨去皮去芯。

2.      锅中放水、柠檬皮丝、桂皮、香草茎、朗姆酒、冰糖制成糖水。

3.      将雪梨放入汤水炖1个小时,炖至软。

4.      待梨子熟后入盆,以芒果片、小红莓、巧克力丝和薄荷叶装饰。
