Oyster Salad with Bacon

生蚝培根色拉

Recipe for 4 persones 四人份

 

Ingredients 配料

24                Oysters                     24个      生蚝

24 slices      Bacon                        24片      培根

1 bunch       Watercress                1捆        豆瓣菜

1                  Red leaf lettuce          1颗        红叶生菜

1                  Green leaf lettuce      1颗        绿叶生菜

2                  Fresh tomatoes(diced) 2个     新鲜番茄(切丁)

80 ml (? cup) Pine nuts                 80毫升(?杯) 松子

45 ml (3 tbsp) Balsamic vinegar    45毫升(3汤匙)意大利黑醋

Butter                                              黄油

Oil                                                    油

 

Method

1.      Open and drain the oysters, reserving the juice. Strain the juice.

2.      Poach shucked oysters in their own juice.

3.      Drain oysters and run individually in a slice of bacon.

4.      Prepare a salad with watercress, lettuce and tomatoes.

5.      Heat a skillet with a mixture of equal parts butter and oil. When the butter-oil mixture is hot, place the oysters in the skillet and cook for 2 to 3 minutes, turning halfway through cooking.

6.      Deglaze pan with vinegar.

7.      Present the salad in the center of the plate with oysters around. Garnish with pine nuts.

烹调步骤

1.      撬开生蚝,取出肉,同时也保留汁水。汁水要过滤一下。

2.      用生蚝原汁煮去壳的生蚝。

3.      把生蚝从汁水中捞起,每个用一片培根肉包裹卷起。

4.      用豆瓣菜,生菜与番茄做成色拉。

5.      热锅,加入等量的黄油和油。混合油烧热时,放入蚝肉煎2到3分钟,期间翻一次面。

6.      往锅里浇上黑醋。

7.      把生菜放入盘子中央,煎好的生蚝围在旁边,用松仁装饰。
