Chocolate Fondue
巧克力火锅
Ingredients 配料
¾ cup Heavy whipping cream (reserve ¼ cup to thin if fondue begins to thicken) ¾杯掼奶油(留出¼杯,巧克力火锅过于浓稠时可以加入调节)
4 Bittersweet chocolate bars (chopped, 3½ ounces each)4排 黑巧克力(每排重3盎司半,切成小块)
2 tbsp Frangelico or Amaretto liqueur (optional) 2汤匙 榛仁甜酒或杏仁酒(也可以不用)
¼ cup Hazelnuts or almonds(finely chopped), optional ¼杯 杏仁(切碎)
Rosemary or ginger optional 10克 香料

Cubed pound cake 黄油蛋糕(切块)
Cubed Cheese cake 芝士蛋糕(切块)
Cookies 曲奇
Dragon fruit 火龙果

Method
1. Heat ½ cup of cream and rosemary or ginger in a heavy non-reactive saucepot over moderate heat until cream comes to a low boil. Remove the pot from the heat and add chocolate. Let the chocolate stand in hot cream 3 to 5 minutes to soften, and then whisk chocolate together with the cream.
2. Stir in liqueur and/or chopped nuts and transfer the fondue to a fondue pot or set the mixing bowl on a rack above a small lit candle. If fondue becomes too thick, stir in reserved cream, 1 tablespoon at a time, to desired consistency.
3. Arrange your favorite dippables in piles on a platter along side chocolate fondue with fondue forks, bamboo skewers or seafood forks, as utensils, for dipping.
4. For the white chocolate, you can add raspberry puree.

4. 如果使用白巧克力,可以加入覆盆子果泥。
